Pastry Cook

Role Description

Reports to: Pastry Chef and Executive Chef

 To create the company experience by preparing the menu items and ingredients

 This position is perfect for a steady and career-oriented individual who seeks advancement in the field of a private Club and Resort with the goal of advancing on his career.

 Must be personable, energetic and engaging.  A strong personal work ethic is required. Outstanding interpersonal skills are required to interact professionally and effectively with members, Guest and staff and can express ideas clearly and precisely in oral and written forms.

Pastry Cook:

  • Works in a high volume, fast paced, and professional work environment.
  • Prepares a wide variety of baked goods and pastries such as but is not limited to, breads, rolls, muffins, cookies, pies, doughnuts, yeast doughs, cakes for many events including birthdays, anniversaries and weddings, breakfast pastries and other items including, frostings, icings, ice-cream bases, custards, fruit fillings, compotes, sauces and plated dessert items according to recipes provided.
  • Cuts, shapes and bakes dough such a bread, cookies, rolled cookies, pastries etc. either by hand or with cutters/ dough rollers.
  • Decorate and finish a variety of baked goods, verrines, plated desserts, banquet items, buffet items, cakes, cupcakes etc.
  • Bakes all products and conducts quality check when finished according to recipes, and directions from supervisors.
  • May be required to prepare items for special diets and/or allergies.
  • Apply proper baking and pastry techniques when producing traditional items.
  • Reviews production schedules from supervisor, to determine variety and quantity of goods to bake and decorate and assembles supplies, and equipment needed for daily baking activities.
  • Practices proper cleaning and sanitation for all work areas, utensils and kitchen equipment.
  • Understands proper usage and safety with kitchen equipment such as deck ovens, front loading ovens, large mixers, and other tools and equipment.
  • Attends to day-to-day issues/ problems that may arise concerning equipment, food supplies, items and unusual conditions and properly reports them to supervisors/ Pastry Chef.
  • Completes production sheets and is able to prioritize productions and time management.
  • Flexible with hours and shifts including weekends and evenings when required. Able to be standing on feet for up to at least 8 hours at a time.
  • Reads, comprehends, and abides by all rules and regulations set forth in the Gasparilla Inn Foodservice Employee Manual and the Gasparilla Inn Employee Handbook

 Essential Qualifications and Competencies:

  • High school diploma or general education degree (GED); or one to three months related experience and/or training; or equivalent combination of education and experience. 
  • A Degree in culinary arts from a recognized culinary program or related field is highly desired.
  • At least two years of cooking experience and high-volume restaurant experience with focus on fine la carte dinning.
  • Must have prior culinary experience in hotels, resorts or private Clubs.
  • Understands food safety, sanitation and food handling procedures.
  • Must have problem solving abilities, be self-motivated and organized
  • Strong verbal communication skills
  • Even temperament and highly respectful of others and others' abilities
  • Must be aligned with the culinary vision and philosophy of The Gasparilla Inn and Club.
  • Must be ServSafe certified or able to be certified
  • Must be able to adapt to changes in a fast paced, dynamic, and intense work environment
